The production of biocompatible nanoparticles (NPs) is one the most attractive research areas in food and drug sciences. The more the ratio of desolvating agents the bigger the particles size. The best ratio for ethanol, Acetone, ethanol: acetone (50: 50) and ethanol; acetone (70: 30) were 4X, 3X, 2X and 2X, respectively. The SEM images (Fig. 2), shows that the nanoparticulation was different for various desolvating agents. BSA NPs produced using ethanol were completely spherical, while the NPs produced using acetone were spherical rod shape which could affect on the DLS results. Curcumin molecules interact with the hydrophobic pockets of BSA molecules which results in the formation of nanoparticles from BSA-Curcumin complexes. The size and shape of BSA-Curcumin NPs were similar to BSA molecules. The Encapsulation efficiency (EE) in different molar ratios of Curcumin: BSA was between 10 to 20 %. High solubility of curcumin in the desolvating agent (Ethanol) is why EE is low, which could be overcome by the surfactant modification. Surfactant was used to dercrease separation of curcumin-BSA. By using surfactant, the Encapsulation Efficiencies increase 2-3 times in the different molar ratios.
