Synthesis and Characterization of Novel ZnO-Whey Protein Nanocomposite at Low Temperature

The incorporation of nanocrystalline ZnO into whey protein to form nanocomposite will possess the unique functionalities and potential applications in material science and food sciences. Herein we synthesized nanocrystalline ZnO particles coated with whey protein in the neutral or mild basic condition in aqueous solution under the room temperature. The solution of zinc nitrate and whey protein were dissolved separately and used as the source material. Nanocomposite ZnO-whey protein powder was produced by dropwise adding Zinc nitrate solution to whey protein solution, followed by centrifuging and oven drying. The XRD and TEM measurements confirmed the ZnO-whey protein composite structure. SEM was observed to identify the surface morphology. Physicochemical and rheological properties of ZnO-Whey protein mixtures were conducted by measuring particle size, Zeta potential and viscosity of the solution. It was found the PH value of the solution has an influence on the size of the particles.
