Colloid Particles for Advanced Control of Product Appearance

Abstract:
Appearance is an important factor determining the perceived product quality. Consumers usually developed strong associations through appearance, and often base their pre-purchase judgments on the appearance of the package or the product. Colloidal particles because of their size offer unique possibility to control product appearance through manipulation of light absorption and scattering. The optical properties of colloidal particles are determined by their size, size polydispersity, wavelength dependent refractive index, and the degree of ordering in space in the product. In this talk, theoretical considerations and application examples for using colloids for creating transparency, whiteness, and colour effects in food and cosmetic products will be presented.
